Job Description
Lead continuous thermal processing operations by controlling industrial oil fryers to deliver optimal product crispness, yield, and throughput.
Supervise shift operators, coordinate line handovers, and ensure rigid compliance with food safety, thermal oil management, and plant safety standards.
Key Duties & Responsibilities
- Control continuous oil fryer line speeds, oil temperature profiles, and dwell times to meet required product crispness and moisture specifications.
- Operate and regulate thermal oil systems, making prompt temperature and flow adjustments to prevent process deviations.
- Enforce rigorous plant fire safety protocols, food hygiene standards, and equipment isolation procedures within the thermal processing area.
- Direct shift operators by allocating tasks according to workload, conducting structured shift handovers, and coaching team members on proper operating techniques.
- Respond promptly to line stoppages, quality variations, or equipment faults by taking immediate corrective action and collaborating with maintenance teams.
- Maintain accurate, timely, and traceable operational records including machine settings, oil quality checks, downtime logs, and shift production reports.
- Liaise with upstream preparation and downstream packaging teams to align production flow and eliminate operational bottlenecks.
- Monitor utility, ingredient, and cooking oil consumption to minimize waste, avoid unnecessary downtime, and maintain cost effective operations.

Education Qualifications & Experience
Education Qualifications
- Bachelor’s Degree or Higher Diploma in Food Science and Technology, Chemical Engineering, Mechanical Engineering, Industrial/Production Engineering, or a closely related technical discipline.
- Ordinary Diploma or recognized tertiary technical qualification in Mechanical, Electrical, or Production Engineering, supported by practical processing plant experience.
- Relevant UBTEB, TVET, or recognized professional certifications in food safety, industrial safety, or operational supervision are advantageous.

- At least 3 years of hands on experience operating industrial continuous fryers in a food manufacturing plant.
