Position: Motel Chef / Head Chef

Location: Nansana, Uganda

Reports To: Motel Manager

Employment Type: Full-Time

Role Overview

The Motel Chef will lead Rosewood’s kitchen operations and be responsible for food quality, consistency, presentation and kitchen team performance. The Chef should understand that food is an important part of the Rosewood guest experience and contribute to developing dishes and dining experiences that fit the property’s refined positioning.

Key Responsibilities

  • Manage daily kitchen operations and coordinate food preparation and service.
  • Maintain consistent food quality, taste, portion sizes and presentation.
  • Develop and maintain menus in consultation with management.
  • Develop signature dishes and curated dining options that support Rosewood's positioning.
  • Supervise, train and coordinate kitchen staff.
  • Maintain high standards of food hygiene, safety and kitchen cleanliness.
  • Monitor stock, purchasing, portion control and food wastage.
  • Work with the Motel Manager and restaurant team to improve the guest dining experience.
  • Support accommodation packages, private dining and special occasions.
  • Provide ideas for food content, chef specials and new dining experiences.

Requirements

  • Certificate, Diploma or equivalent professional training in Culinary Arts, Food Production or a related field.
  • Proven experience as a Chef in a hotel, motel, restaurant or similar hospitality environment.
  • Strong knowledge of food preparation, kitchen operations and food safety.
  • Ability to supervise and coordinate kitchen staff.
  • Good understanding of stock, portion and wastage control.
  • Ability to work under pressure while maintaining quality and consistency.

Preferred

  • Experience in a boutique hotel, motel or premium restaurant.
  • Experience creating signature dishes or curated dining experiences.
  • Strong commercial awareness and interest in developing food experiences that attract customers.
