Overview

Our client is seeking an experienced, dynamic, and hands-on Food and Beverage Manager to lead their F&B operations. The ideal candidate will oversee all aspects of their dining outlets, banquets, and room service, ensuring exceptional guest experiences, high culinary standards, and profitable operations. You will be responsible for managing the F&B team, controlling costs, and ensuring compliance with all health, safety, and quality standards.

Responsible For

1. Operations & Guest Experience

  • Oversee the daily operations of all F&B outlets, including restaurants, bars, banquets, conferences, and room service.
  • Ensure consistently high standards of food quality, presentation, and service in line with the property’s brand standards.
  • Collaborate with the Executive Chef to develop innovative, seasonal menus that incorporate high-quality local produce from the Eastern Uganda region.
  • Actively engage with guests, handle feedback and complaints professionally, and ensure maximum guest satisfaction.

2. Financial Management & Procurement

  • Develop and manage the annual F&B budget, forecasting revenues and controlling expenses to achieve profitability targets.
  • Monitor P&L statements, analyze variances, and implement corrective actions where necessary.
  • Oversee inventory management, minimizing waste and pilferage through strict stock control procedures.
  • Manage local and regional supplier relationships, negotiating contracts to ensure cost-effectiveness without compromising quality.

3. Team Leadership & Human Resources

  • Recruit, train, mentor, and evaluate F&B staff (waitstaff, bartenders, hosts, and stewards).
  • Create staff duty rosters ensuring optimal coverage during peak and off-peak seasons.
  • Foster a positive, inclusive, and high-performance team culture, conducting regular training on service standards, upselling, and hospitality etiquette.
  • Ensure staff adherence to grooming, uniform, and behavioral standards.

4. Health, Safety, and Compliance

  • Ensure strict compliance with the Uganda National Bureau of Standards (UNBS), local council regulations, and international food safety standards (e.g., HACCP).
  • Maintain impeccable hygiene and sanitation standards across all F&B areas, conducting regular audits.
  • Ensure all necessary liquor licenses, health certificates, and operational permits are up to date.

Additional Requirements

  • Willingness to Relocate: Must be willing to live in Eastern Uganda.
  • Language Skills: Fluency in English is required. Proficiency in local languages is a distinct advantage for team and community relations.
  • Adaptability: Ability to thrive in a regional setting, managing logistical challenges and building strong relationships with the local community.
